Celebrating Our Independence...

How did you celebrate the nation's Independence Day? Did you partake in the traditional stuff... hot dogs, hamburgers, grilling, watermelon, fireworks, mosquito bites?  Our house celebrated with a nod to tradition...

We had turkey sliders (recipe will be posted next Tuesday) with plenty of pickles and cheese.  You can never have too many pickles and cheese on a sandwich or turkey burger.  You're probably wondering why turkey? Well, this household doesn't do red meat.  Ironic when considering my grandfather was a cattle and horse rancher, but our little family went red meat free about 9 years ago and are extremely happy with our decision.

But not eating the red pretty much stops with the red meat.  We eat plenty of other things that are red, including strawberries.  Well, I should say Mum and Dawn eat strawberries.  I'm allergic, so I ate this instead...

Raspberries! I adore raspberries.  Luckily for me, we live in an area where raspberries are plentiful.  So, while Mum and Dawn had their strawberry shortcake, I dived into this delightful raspberry shortcake with fresh whipped cream.  Fabulous.

And then we celebrated the setting sun and clear skies but shooting off a lot of fireworks.  The cool, fresh air was quickly filled with firework smoke but that is the unfortunate side effect of so many fireworks.  I have to admit, while the lights are pretty - I am glad it only happens once per year.  All that smoke and loud noise got old fast, while the morning-after brought spent firework carcasses all over the streets.

Hmmm.... I think I want some more raspberry shortcake.

  1. Raspberry shortcake sounds amazing. I have not had it in years and forgot you could do it.

So glad you all had fun.
