One of the favorite salads is called the Greek Salad. It's fresh, packed full of flavors, and - even more importantly - it is easy. It takes less than 10 minutes to make and is never a disappointment. And since I decided Greek Salad is what I wanted for lunch today, I thought I would share this recipe with you.
Greek Salad
1 long English Cucumber1/4 cup of grape tomatoes
1/4 diced red onion
Extra Virgin Olive Oil (EVOO)
Crumbled Feta Cheese
Pepper
Peel the cucumber and chop into large chunks. Cut the grape tomatoes in half. Mix the cucumber, tomatoes, and onion. Lightly drizzle the EVOO and crumble Feta on top (the Feta amount is to preference... I like a lot of Feta). Mix everything up, so everything is lightly coated. Dish into bowls and top with pepper (pepper amount is to taste). Serves 4.
This definitely is a go-to salad for the summer because it is cool and refreshing. However, I eat this salad all year-round and it is easily adaptable to suit being served with poultry, fish, pork, or beef. Give it a try and make sure to come back and let me know how you liked it.
What's the difference between a regular cucumber and an english cucumber?
ReplyDeleteGood question! English cucumbers are also called burpless cucumbers. They have a slightly sweeter taste (the other kind tend to be more bitter tasting). English cucumbers also have a firmer texture.
