One of the favorite dishes this family likes to eat for dinner, especially on warm summer nights is the Monte Cristo sandwich. But what is great about the Monte Cristo is that it is great all year around... the perfect comfort food. And, it doesn't take much preparation or energy to make. Here is the recipe...
Mix two eggs and a cup of milk. Beat together well.
Soak your bread (both sides) in the egg and milk mixture.
Then put on the griddle. Make sure you melt butter across the griddle first.
Once both sides are golden brown, place your cheese (provolone, Swiss, or mozerella) on each piece of bread. The cheese is what is going to glue the sandwich together.
While the cheese is melting on the bread, you should layer your deli-sliced meat. We use ham and turkey breast. After about 30 seconds, place the lone slice of bread with melted cheese on top of the slice covered with cheese and deli meat. Flip the sandwich on the griddle and let cook for an additional 15 seconds.
Take the sandwich off the griddle and slice in half. You'll be able to see the warm, melted cheese ooze from the bread and meat.
There is the option of lightly sprinkling confectioner's sugar over the top slices, but we opt not to. It adds a nice touch of sweetness to the savory of the ham and turkey, but we find it to be too much. Part of the charm of the Monte Cristo is the subtle taste of butter from the bread, which becomes drowned out by the confectioner's sugar.
